Brandy Fruitcake

"Ingredients: 500g Raisins, 500g chopped Pitted Dates, 125g Sultanas, 125g Currants, 200g Glace Cherries, 1 Cup Brandy, 250g Butter Cut Into Small Pieces, 1 ½ Cups Dark Brown Sugar, 1 Tablespoon Vanilla Essence, 4 X 60g Eggs, 200g Dark Chocolate, 1 Cup Plumb Jam, 2 Cups Plain Flour, ½ Cup Self Raising Flour, 1 Tablespoon Cinnamon
Instructions: Mix the dried fruit in a bowl and add the brandy then leave it marinate for 1-2 hours. Line a 23 cm deep round cake tin (or 2 x 18cm tins) with a double layer of baking paper on sides and base. Wrap outside of tin with a double thickness of brown paper and tie with string or secure join with a paper clip. Heat oven to 160°C. Beat butter sugar add vanilla until creamy, then beat in the eggs one by one, beating well. Add to the fruit and mix well. Melt chocolate in a small saucepan over simmering water, or in the microwave for about 60 seconds, and then stir in the plumb jam and pour over the fruit. Fold in the flour and cinnamon, and pour the cake mixture into the prepared tin. Smooth off the top and shake the pan to settle contents and remove air pockets. Bake for 2 ½ - 3 hours (2-2 1/4 hours for smaller cakes) until a skewer test comes out clean. Remove from the oven, leave in the tin, wrap in tea towels and rest overnight befor serving.

Traditional Roast Beef

"Ingredients: 2kg. Rib Eye Round Roast Beef, 500g Beef Stock, 50g All Purpose Flour Instructions: Preheat oven to 175°c. Place beef in shallow roasting pan and roast 18 minutes per 500g or until a meat thermometer registers 68°F. Take out the meat and pour off the fat. Sprinkle flour over bottom of roasting pan. Gradually whisk stock into the flour until smooth. Cook over medium heat, stirring constantly, until mixture boils and thickens. Slice the roast and serve with the gravy. Prep Time: 5 min - Cooking: 1 hr - Serves: 13-15"

Glazed Mustard Ham
|
"Ingredients: 27g Vegetable Oil, 70g Cooked Minced Onion, 220g Maple Syrup, 110g Cider Vinegar, 30g Dijon Mustard, 25g Mustard Seed, 1 boneless ham (2.5 to 3kg) Instructions: Preheat oven to temperature 215°C. Combine first 6 ingredients and pepper to taste in a heavy saucepan. Bring to a boil, stirring about 2 mins. Set aside to cool. Cut a diamond pattern on the outside of ham. Place ham on a lightly oiled roasting rack. Place in a shallow roasting pan. Brush syrup mixture over ham. Bake 5 minutes, reduce heat to temperature 160°C, and bake another hour, basting with syrup mixture every 20 minutes. Remove ham from oven and let it set 10 minutes before slicing. Prep Time: 10 min - Cooking: 1 hr, 15 min. - Serves: 10-15 (allow 200g ham per person)"

Marmalade Pork Roast
|
"Ingredients: 230g Orange Marmalade, 55g Light Corn Syrup, 30g Lemon Juice, 4g Dry Mustard, 4g Ginger, 4g Salt, 3g Ground White Pepper, 2-kg. Boneless pork loin roast, rolled and tied Instructions: Combine marmalade, corn syrup, lemon juice, 1g mustard, and 2g ginger in a saucepan. Cook over medium heat 5 minutes, stirring frequently. Set aside. Combine 3g mustard, salt, pepper and 2g ginger in a bowl. Rub mixture into roast. Place roast on a grill over a foil drip pan. Close grill hood. Grill 1 to 1-1/2 hours over slow coals, until a meat thermometer reads 70°F. Brush with glaze every 10 minutes during the last 30 min of grilling. Let stand 10 min before carving your roast. Prep Time: 15 min - Cooking: 1 hr, 30 min. - Serves: 12-15"
